Quinoa Salad with Tuna

Ingredients
  

  • cup quinoa
  • 300 gram green beans
  • 1 cucumber (chopped)
  • 4 tomatoes (chopped)
  • 2 cans tuna in oil
  • fresh parsley (finely chopped)
  • pepper to taste

Method
 

  1. Cook the quinoa according to the instructions on the package. Cook the green beans for 6 minutes.
  2. Drain the quinoa and the green beans separate and rinse both in a colander under cold water. Drain well.
  3. Mix together the green beans, cucumber, tomatoes and the quinoa and carefully mix in the tuna and parsley. Bring to a taste with pepper.
  4. Serve in a bowl or divide over 4 plates.
  5. You can add some extra vegetables like fried mushrooms, zucchini or red onion.
