Omelet with Avocado

Ingredients
  

  • 2 eggs
  • olive oil
  • couple mushrooms (sliced) the kind you like!
  • 5 cherry tomatoes or 1 tomato (sliced)
  • ½ avocado (sliced)
  • salt and pepper to taste

Equipment

  • frying pan

Method
 

  1. Beat the eggs. Fry the mushrooms put aside and add the eggs. You can either fry the tomatoes or add them later on. Sprinkle the avocado with some lemon.
  2. Make sure your plate is warm. Slide the omelet on the plate add tomato and avocado and fold. Salt and pepper to taste.
  3. Serve with toast!
