Potato Tortilla with Bacon

Ingredients
  

  • 50 gram bacon (cut in stripes)
  • 2 clove of garlic (sliced)
  • 1 onion (cut into half rings)
  • 2 tbsp olive oil
  • 4 roasted red bell peppers (jar)
  • 5 eggs (large)
  • 2 cups hash browns
  • salt and pepper to taste
  • 1 tbsp fresh parsley (chopped)

Equipment

  • spring form 8 or 9 inch, frying pan

Method
 

  1. Preheat oven to 350 F / 175 C.
  2. Heat the olive oil in the frying pan and fry the bacon strips for 1 minute. Add the sliced onion and garlic and fry for another 2 minutes.
  3. In the mean time cut the roasted bell peppers in strips. Beat the eggs and sprinkle with salt and pepper. Add the roasted bell peppers, hash browns and the onion mixture.
  4. Pour the mixture into a greased spring form pan and bake for 25 minutes. When done remove the side and slide gently onto a plate. Sprinkle with the parsley!
  5. Serve warm or lukewarm. Great for breakfast, brunches!
