Oven Roasted Pork Belly

- Pat skin dry with a paper towel. With a sharp knife, score through skin every ½-inch at a diagonal, cutting through the skin and into fat, but not deep that you hit meat. Repeat cutting in an opposite diagonal to create a diamond shape pattern.
- Mix the oil, all-spice, salt and honey. Season pork belly meat with the mixture. Sprinkle the skin with the soya sauce and some honey. Cover and refrigerate overnight.
- Preheat oven to 450 F
- Roast pork belly for 30 minutes on the middle rack in a heavy, oven safe pan or skillet, skin site up. Reduce heat to 275 F and roast for an hour or more, until tender. (Larger pieces of pork belly will take longer)
- Remove from oven and let it rest.
- Enjoy with soup, salad, rice, pasta, noodles etc…
- Note: Adjust the ingredients if you have more then a 1 lb. pork belly

I have not tried pork belly. This looks amazing, so I will have to try making it!
