Coconut Corn Soup

Ingredients
  

  • 1 onion (chopped)
  • 1 inch fresh ginger (finely chopped)
  • 2 tbsp sunflower oil
  • 1 clove of garlic (minced)
  • 1 tbsp wheat flour
  • 1 red bell pepper (chopped)
  • 300 gram cornel corn (can)
  • 3 cups chicken broth
  • 400 ml coconut milk (Light)
  • 3 green onions (chopped)
  • salt and pepper to taste

Equipment

  • hand blender

Method
 

  1. Heat the oil and fry the onions for 5 minutes. Add ginger and garlic and fry for another 2 minutes. Stir in the flour.
  2. Immediately pour in the broth, coconut milk, corn and red bell pepper, salt and pepper to taste. Stir, bring to a boil and let it simmer for 15 minutes.
  3. Puree the soup with the hand blender. Divide the soup over the bowls and sprinkle some green onions in each bowl.
  4. Eat with buns, toast….!
